Busy Weekend, New Job, and a Week of Simple, Delicious Meals

This weekend was a whirlwind! Saturday was especially exciting because we celebrated my daughter's baby shower - friends and family - and so much love in one room. We also celebrated my husband's best friend's son turning 21. It seems like it's been non-stop celebrations, and honestly, I am feeling grateful and a little tired all at once.
With all the activity, staying on top of food prep is more important than ever. I'm starting a new job tomorrow at the Eye Surgery Center of Michigan, and I want to make sure I'm fueling myself properly without relying on takeout.
The mornings I will keep simple for my 25 minute commute: black coffee, Ezekiel bread with real peanut butter and some fruit. It's quick, filling, and keeps me going until I can sit down for something more substantial. For lunch, I'm bringing a ball jar salad and some nuts for snacking - easy to grab and satisfying.
Here's the dinner plan for the week:
Monday/Tuesday:
Mushroom Stroganoff
I had it tonight, and the leftovers will last for both Monday and Tuesday. This is one of my favorite comfort meals - hearty, satisfying and even my non-plant-based household loves it. It's the perfect start to a busy week.
Wednesday/Thursday
Sweet potato & Lentil Tacos
The basis for this recipe I got from the plant based chef "Sweet Potato Soul" and tweaked it my liking. I pre-cook the sweet potatoes and lentils, so these taco come together in minutes. Quick, nourishing, and perfect for nights when I am pressed for time. I also have guacamole ready, which I will use in the tacos and as a veggie dip for snacking throughout the week.
Friday/Saturday
Mushroom Barley Soup
Using up the mushrooms from the stroganoff, I will be ending the week with another warm, comforting meal. Soup is great for batch cooking, and is perfect for those evenings when I want something simple, but satisfying.
Even with a packed weekend and a busy week ahead, a little planning goes a long way. Prepping ingredients in advance and having meals ready to go keeps me on track and makes it easier to enjoy the celebrations without stress.
