Week 2 Meal Prep

I am sticking to the 1 soup, sandwich, and a daily salad mix for the week, plus a sweet to help keep me from wandering. My meals this week with be designed around Butter Beans (Lima) and Cannellini beans (white kidney). When someone is on a healthy form standard American diet (SAD), and they meal plan, they do so around their protein, which is meat. I used to do it myself. Chicken, turkey, beef, pork...once that was established then I would add the carbs and the veggie sides. NOW I still plan around the protein, but plant based protein.
Breakfast: I will stick with a morning smoothie or protein shake. To switch it up, oatmeal.
Lunch: soup and sandwich. My soup this week- Lemon Cannellini Vegetable Soup, which combines onion, garlic, carrots, celery (the basis for most of the soups I eat), and then carrots, mushrooms, zucchini, cannellini beans (I can drained and rinsed), veggie broth, Italian Seasoning to keep things simple, and salt/pepper to taste.
Sandwich is my favorite: un-tuna salad which basis is chickpeas, mixing together Tahini, maple syrup, dijon mustard, onion, diced pickle, capers, and pumpkin seeds on toasted Eziekel bread (preservative free-found in the freezer section)
Dinner-Salad most nights! I usually just through a bunch of different things together, and I will probably still do that once or twice, but I also found a great recipe, will actually Chat CPT found a great recipe: Blackberry Apple Butter Bean Crunch Salad that sounds delish! It entails shredded cabbage, mixed greens (or spinach), 1 apple, 1 cucumber, 1 carrot shredded, 1 can butter beans, pumpkin or sunflower seeds, blackberry balsamic (which I have-but you can use regular or another sweet flavored one), squeeze of lemon.
Dessert and snacks- making up some sweet potato brownies, green grapes, and I just purchased some unsweetened apple sauce I have not had in a long time.
What do you think? Week 2 doable? I find if I keep the protein high with healthy fats, and eat enough, I don't crave crap! Chocolate if different though, lol... I crave it! I use real cacao which a super food, and other whole foods, so it too, is good for me! A win win!
